Billsboro “Sawmill Creek” Pinot Gris 2016: $17 Very Good

The Billsboro “Sawmill Creek Vineyards” Pinot Gris (Finger Lakes, NY) 2016 $17 [Very Good] has very good flavor and some complexity.  At the moment, it hasn’t quite “come together,” so put this bottle away for a couple of months or decant it before serving.

Light pink-tinged lemon in color, the airy aromas feature beeswax, ripe apple, fruit cocktail, orangey citrus, and hints of mint and white flowers.  Medium bodied, soft, dry, and slightly tannic, with a loose-knit mouth feel, balance is good.  The balance of this wine improved as it aired.  Solid flavors of orange, fruit cocktail, ripe apple, and a butter/beeswax note are initially rather diffuse, but come into much better focus with aeration.  The finish is lightly tart, show a bit of tannin, with good length.  March 2017
